Chicken Rice from Bugis Junction

Singapore’s national dish. Garlic, sesame and chicken oils are marinated into the rice grains and then boiled in chicken stock. The chicken is boiled, and then dunked in cold water or ice to smoothen the skin and gelatinize the oils to give it that extra tautness to the meat. The meat is sliced and served with the tasty rice and the tangy chilli dip, ginger sauce and dark soy sauce is certainly a must.
